Churrería Manolo abre sus puertas en Panamá el día 20 de Diciembre de 1972 en la Vía Argentina, como un negocio familiar. La cabeza de esta empresa es el señor Francisco Ruiz M. (Q.E.P.D.), emigrante español, que junto a su esposa Enriqueta y un grupo de dieciséis colaboradores emprenden el reto en un local de 65 puestos y con un estilo de cafetería europea.
