The tarte fambée (flammkuchen) is a dish with great history and provenance, originating from the Alsatian region of eastern France. In the late 19th century Alsatian farmers would typically bake breads in a communal oven once a week. Whilst the oven was reaching its required temperature the farmers would use a piece of dough, rolled thinly to test the readiness of the oven. Often topped with fromage blanc, onions and smoked bacon lardons, the farmers would have a quick and sociable midday meal prior to baking their breads. Whilst the dish has similar characteristics to a pizza, the wafer-thin light base makes it a dish for any time of day.
