Why Oklahoma City Area? The proprietors, native in Oklahoma, came back to their roots to introduce a whole new style of food. Mexican food is one of the worlds favorite and with over 200 Mexican restaurants in the metro area, the “new Mexico” Mexican cuisine stands out as unique, delicious, and super fresh—right here in Edmond, Oklahoma at “The Purple Burro”. New Mexican cuisine is a regional food found in New Mexico– reflecting the regional climate and long history as part of the native Americans, Mexicans, Spanish and united states culture. New Mexico chilies (grown in new Mexico), when harvested as green chilies is perhaps the “defining” of new Mexican food compared to neighboring styles. From our nations early colonization and trade, in the 1500’’s there was a Spanish influence, combining their imported rice, beef, pork, chicken, wine, garlic, and onion with the native American corn-based dishes and chilies and herbs. “the purple burro” is continually perfecting these ingredients with recipes of hormone free beef and chicken to please the palates of locals and travelers by combing the unique hatch valley chilies (from hatch valley, new Mexico), into their customers best loved dishes. From Edmond's favorite fundido to the number one requested new menu item: “fajitas,” our fresh double portion chicken with sweet peppers, onions and tomatoes with premium tortillas and fresh made sides.
