I remember my first cooking lesson back in 1975. I wasn’t older than 5 years old. I pushed the chair next to my mother by the cooker and I passed to her the herbs and spices. That day my mother taught me how to stir the food. I remember the aromas from the food as it was cooking and I knew right then what I wanted to do with my life. I wanted to be a chef. As a result, I burnt down my mother’s kitchen when I was seven and again when I was thirteen. My mom just smiled and said ‘about time to redo the kitchen’. At 13 years old I got my first paid job as a waiter at our local restaurant. Since then any opportunity I get, I would work in restaurants or hotels.

At 13 years old I got my first paid job as a waiter at our local restaurant. Since then any opportunity I get, I would work in restaurants or hotels.

At University, I was awarded the best pastry chef at a Nestle European competition. It was not easy, especially with my strict tutors then, my friends now. When I told Aleko, my teacher that I didn’t want to learn the hollandaise sauce, he just gave me a smack and told me that I was not going to leave the class until I get it perfect. He tried the sauce several times and after seven hours I crawled out of the class. Throughout my career I have worked in many countries, learning about other cultures and their Kitchen. In Spain at Expo 92 were about half a million people visited the exposition daily I managed for Orange Singapore and Cyprus government one of their many restaurants.

In the USA I worked for Atlantis Cruise Ships, on the biggest ship at the time cruising the Caribbean islands. In the UK among other places, I work for the Queens hotel owned by the Royal family and owned Mythos Village which was known for good food and extraordinary parties.

In Cyprus, I worked for Olympus Restaurant, and run my own Catering and Take away business. I have also worked with Antonis Kavazis, one of the most well-known chefs at the time in both his restaurant’s, Protaras Corner and Andama.

About 5 years ago I have met my wife Anna and two years ago we had our daughter Elena. We decided that we need to have a Kitchen with only fresh food, not processed, no preservatives, no microwaves and affordable for everyone. And here we are at Yiamiam.
