About Certified Piedmontese Beef: Certified Piedmontese cattle originated in the Piedmont region of northwest Italy, and are today raised on family ranches across the Midwest. Cattle are raised humanely and responsibly on land that is managed sustainably. Ranchers employ the use of low-stress handling techniques to handle them humanely and responsibly. The animals spend most of their lives roaming pastures, and they never receive added hormones, antibiotics, or animal by-products. Certified Piedmontese beef is naturally tender, which means that fattier cuts like ribeye have a fraction of the fat and calories, despite being as tender as Prime-grade ribeye. At the same time, secondary cuts like sirloin are exceptionally tender.
