La poca quantità di lievito (0,5%) esaurisce la sua attività durante le sue due lievitazioni (quasi 48 ore). Proprio per questo, non gonfia e risulta estremamente leggero e digeribile.
La farina di primissima qualità, il sale e il 4% di olio Extra Vergine di Oliva, fanno il resto. Quest'ultimo sostituisce lo strutto rendendo la nostra schiacciata assolutamente compatibile con le diete vegane e aumentandone le qualità nutrizionali ed organolettiche.
Ovviamente contiene glutine e quindi non é indicata per i celiaci
