République is a bakery business that produces authentic fresh artisan boulangerie. We serve sweet and savory pastry and bakery products in different yet competitive taste, by combining the highest quality of ingredients to achieve a high-end product.

The most ancestral techniques are combined to produce bread, we put a lot of time into the creation of our products; which is the only way to give it a natural and strong flavor. We make sure we teach our clients the story of every item on our menu to love them as much as we do…

Bread…
As it has been over the years, the range of bread is limitless; they are all crispy from the outside, soft and delicious from the inside. There is an old saying that says ‘Good things take time’; the flavor and texture of a long-fermented loaf completely various from a short fermented one. That’s why the life cycle of our loaf is longer than the majority of Parisian bakers in town.

We exclusively use the wild yeast culture in our creation in some of our loaves (ex: sourdough bread) as our sole leavening agent (occasionally we use commercial yeast but in very small quantities); we give the sourdough culture time to perform its magic in our dough before baking it, to reach a much stronger and natural taste.

Our dough is composed of two or more preferment sponge, which nurtures its taste and flavor as well.

By producing the perfect mix of acid and gas in the dough we will present the most delicious, nutritious bread than any other.
